Choc Chip Muffins

I always forgot just how easy these are to make and the bonus is they are very tasty as well.
Ingredients
- 2 Large Eggs
- 60ml Vegetable Oil
- 120ml Whole Milk (I cheat and use normal)
- 1tsp Vanilla Essence
- 250g Self Raising Flour
- 200g Caster Sugar
- 120g (ish) Choc Chips
Method

Whisk together the eggs, veg oil, vanilla and milk.

In a separate bowl sieve and mix together the flour and caster sugar.

Mix both together till they are almost combined fully.

Now add in 80g of choc chips and continue to mix together.

Cover the bowl and place in the fridge for 2 hours.

Pre Heat the oven to 200c

Set out paper cases, using a spoon scoop out the mixture and add into the cases, remembering to use the last of your choc chips to top the mixture to give them a little extra choc chips.

Place in the oven and bake for 7 minutes, then turn the heat down to 170c and bake for a further 13 minutes.

You can tell the muffins are done when you can place a toothpick into them and they come back out clean.
