Empire Biscuits

Empire Biscuits are a classic which are very popular here in Scotland and are very tasty. You can top with any type of sweet you want or even half a cherry which seems to be more the traditional route. These area really easy to make and you can put them together really quickly in a couple of hours.
Method
Biscuits

Preheat the oven to 180

In your mixer or by hand cream the butter and sugar together.

Beat your egg and add half to the butter/sugar mixture and mix in.

Now add flour a third at a time and keep mixing in.

If the mixture gets too dry and crumbly, add a little of the egg you have left over to help it all come together and keep mixing.

Once ready remove dough and roll out to about 1m thick. Now cut your desired biscuit shape and place on baking trays.

Add to the oven and bake for around 10 minutes of until golden and remove from oven, place on rack to cool.

Once cooled but not cold take the biscuits and add a teaspoon of the jam to one side then sandwich them together. Once all are done, place in the fridge to help cool for 10-15 minutes.
Topping

Take your icing sugar and place in a bowl, add a couple of teaspoons of warm water and keep stirring till the power starts to form a paste. The paste should not be lumpy but smooth and be fairly thick. If you need some extra water add very small amounts to get it right. Be warned not to add too much as it ruins the consistency.

Once ready take your biscuits and place top down into the icing. Remove and smooth off if needed then place on the cooling rack and place the sweet of choice on the top.

Once all are done, place into the fridge again this time to help the icing to solidify.
