Mini Shortbread and Nutella Chock chip Cookies

These may be a little fiddly to make when it comes to putting them all together but they are worth it because they are very very tasty.


Ingredients

  • 110g Salted Butter
  • 55g Granulated Sugar
  • 160g Plain Flour
  • 80g Choc Chips
  • Nutella

Method

  1. Pre heat the oven at about 180c

  2. Mix together the flour, sugar and butter until it comes together to form a dough. Make sure to mix a little longer so as it all is thoroughly mixed.

  3. Add in the choc chips and keep mixing until they are all within the dough.

  4. Break the dough into 15g pieces and ball those up.

  5. Flatten each of the balls our making sure they are all about the same depth and width, then place on your baking trays

  6. Place in the oven and bake for about 10-12 minutes or until golden.

  7. Once ready remove from oven and place all on a cooling rack and allow them to thoroughly cool otherwise the nutella will melt as you try to put them together.

  8. Fill a piping bag with nutella and pipe onto one cookie then place another on top to sandwich. You will want to place these into the fridge to cool and harden the nutella other wise they will be too squishy.
