Chicken à la King

A creamy chicken dish with red peppers. This is best served with rice to accompany it.
Ingredients
- 2 tsp Oil
- 2 Chicken Breasts
- 5 Large Mushrooms
- 2 Red Peppers
- 1 Onion
- 1 Clove of garlic chopped
- 220ml Double Cream
- 220ml Chicken Stock
- Salt & Pepper
Method

Chop the mushrooms, onion, peppers and chicken into strips, then fry each individually and set aside for later. (use the garlic when frying the chicken)

In a pan add the onions and the chicken stock and bring almost to the boil.

Add the double cream and cook until it starts to thicken.

Add the peppers, mushrooms, and chicken and keep cooking until it has thickened.
