Roasted Carrot and Honey

Normally when I make a mostly carrot soup they end up a bit bland and I have to find ways of spicing it up. This however tasted so so good.
Ingredients
- 1Kg Carrots
- 1 Onion
- 1 tsp Cumin
- 1 tsp Coriander
- Hand full Basil
- Butter
- Vegetable Stock
- 2-3 tsp Honey
- 2-3 segments Garlic
Method

Chop the carrots then add to a roasting tray and put in the oven

Chop the onion & garlic and place into a pot with some oil and fry till they are soft.

Add both the teaspoons of Cumin and Coriander to the onion and cook for about a minute

Separately boil some water and add with vegetable stock to the onion in the pot.

Once the carrots are ready remove from the oven then add into the stock, also add some salt and pepper to season then bring to the boil.

Add your basil roughly chopped and once the carrots are ready (soft), you can blitz the mixture with your hand blender.

Now add the honey and also add in the butter and cook to reduce and thicken up.
