Roasted Tomato

I have made this a few times using tomatoes, Onion and garlic fresh from my garden and it is very tasty. I did learn after my first time making it, its a good idea to sieve the ingredients once they have been blended as it helps to make the soup much more smooth.
This recipe can be adapted in a couple of ways. You can add basil during the roasting process to add and extra something or if you want to make it a bit spicier you could add chopped red peppers in during the roasting process as well.
Ingredients
- 1Kg Mixed Tomatoes
- 1 Red Onion (chopped)
- 1 Whole Garlic Bulb (not just 1 segment)
- 1L Chicken Stock
- 150ml Double Cream
- 45ml Olive Oil
- Salt and Pepper
Method

Preheat oven at 200c

In a roasting try add the tomatoes, red onion and garlic. Drizzle the olive oil over and season with the salt and pepper

Place in Oven and Roast for 30-35 minutes

Once ready transfer to a pot and add in the chicken stock and bring to together

Blend with a hand blender

Put the contents through a sieve, this will help to remove any seeds and tomato skin

Stir in the double cream and heat till ready to eat
